What is this thing on my thermostat housing (in my engine compartment)?

I have a 1975 Holden HJ Kingswood with a 202 6cyl and I wonder what this thing that comes to my thermostat housing? I looked online and there Kingswoods other with this thing. It is a large nut (the nut of nuts and bolts) with a small bar metal coming out of what can be undone to reveal what looks like oil. What is this, what works and what I need (as I'm looking chrome housings thermostat but I have this thing for them.) which is a coolant sensor tempearature …. thermostat housing some of them have at it .. Not a few .. its not connected to anything … so you can take off and thermostat housing replace it with whatever you want … i wouldnt go with a cheap thermostat housint chrome … I put in a brushed aluminum casing of the thermostat.
